Filter Coffee



Ingredients :

Coffee powder – 3 tbsp
Boiling water – 1 cup
Milk – 1 cup (8 oz or 240 ml)
Sugar – 2 and 1/4 tsp (adjust to taste)



How to brew coffee using the special filter?

1. Add 3 tbsp of coffee powder to the filter and press it using a ladle or spoon or the stemmed disc that comes along with filter.

2. Add boiling water slowly (very slowly) and make sure coffee powder is pressed well or else water penetrates quickly which we don’t want.

3. ose the lid and let it rest. Decoction will get collected in the bottom container.

4. This is the first decoction. You can add this to milk and make coffee which will be strong.

5. ou can also add another 1/2 cup of boiling water to the filter and extract the second decoction.

6. You can use this as well for making coffee which will not be as strong as the other. Or you can mix it with the first decoction for uniform concentration and then use it.


Preparation of Coffee :

1. Boil milk and transfer it to the serving cup.

2.  Add sugar and decoction (little by little), adjust the level depending on how strong you drink your coffee. 

3. Now pour from the cup to the saucer and back to the cup until everything is mixed and froth is formed. 

* Enjoy your coffee.

Cold Coffee

Ingredients:

1 glass of Chilled gokul milk (full fat milk)
2 tbsp Sugar
1 tbsp Instant coffee powder
1 scoop Vanilla ice cream
1 tbsp Fresh cream
3-4 Ice cubes

Grated chocolate for garnishing


Preparation Method :

Add all the ingredients in a shaker and shake it well. Pour it in tall glasses and serve with scoop of vanilla ice cream and grated chocolate.

Pineapple Coconut Smoothie


Ingredients :

Pineapple Juice - 2 cups 
Cream of Coconut - 1 cup 
Crushed Ice Cubes - 1 cup


Preparation Method :

1. Blend all the ingredients in a mixie/blender to a smoothie.

2. Add little sugar if you like it sweeter

3. Pour into glasses, garnish with a pineapple wedge or a cherry and serve.


Tips :

- Use heavy cream if you cant find coconut cream.

- To make life easier, just buy a can each of 'Coconut Cream' and 'pineapple juice' and blend together instead of making fresh juice

- The original recipe of pina colada calls for adding 2 spoons of Rum to the above mixture.






Raspberry Tea

Ingredients :

Raspberries - 1 cup (fresh/frozen)
Tea - 3/4 tsp (or 2 tea bags)
Water - 2.5 cups
Sugar - 2 tblsp (or as needed)
Ice Cubes

Preparation Method :

1. Bring the water to a boil and switch off.

2. Add the tea and raspberries to the boiling water. Cover and let it stand for 5 minutes.

3. Strain the tea into serving glasses.

4. Add ice cubes and sugar. Mix well.

* Garnish with some raspberries and serve chilled.





Ginger Cardamom Tea

Ingredients :

Milk - 1 cup
Tea - 2 tsp
Water - 1.5 cup
Ginger - 2 " piece (crushed)
Cardamom - 2 pods (crushed)
Sugar/Honey - to taste
Lemon - 1/2 piece

Preparation Method :

1. In a saucepan, bring water to a boil along with crushed ginger and cardamon pods.
(You could also add ginger powder and cardamom powder)

2. Add the tea leaves and let it come to a rolling boil again.

3. Reduce the flame and let it simmer for 3-4 minutes for all the essence of the tea to be released in the water.

4. The basic ginger cardamom tea is ready. You could flavour it in different ways. I've given 2 options below.

Type - I (Ginger tea with milk - Chai)

5. Add the milk to the above tea water and bring it to a boil.

6. Strain the tea using a strainer, add enough sugar and enjoy it piping hot with biscuits.

Type II (Ginger Lemon tea with honey) 

5. Strain the tea to a cup and squeeze in the lemon juice.

6. Add honey to taste and enjoy it after a heavy meal or as a refreshing drink. This type of tea could be served hot or cold.

Milk Shake

Milkshake is a cold, sweet and refreshing drink made with milk, ice cream and some flavouring. The flavorings could be fresh fruit pieces or fruit puree or fruit syrup or chocolate sauce.

Ingradients :Fruit pieces (any fruit) - 1 Cup
Cold Milk- 3/4 cup
Sugar -1 tblsp (or to taste)
Ice cubes -1/4 Cup (or as needed)
Vanilla Icecream - 2 tblsp



Cantaloupe Milk Shake

Preparation Method :


1.Clean and peel the fruit that you use and cut into small chunks. Be careful to remove any seeds if present. You can also use store bought fruit puree.
2. Blend the fruit chunks/puree with all the other ingredients until it is smooth and creamy.
2.Pour in a tall glass, top with some whipped cream and serve cold.

Tips :

The different milk shakes that can be made are chocolate milk shake, strawberry milk shake, vanilla milk shake, cantaloupe milk shake, grape milk shake, mango milk shake, banana milk shake, apple milk shake, pomegranate milk shake, chikoo milk shake, blueberry milkshake, peach milk shake, guava milk shake, avocado milkshake etc.

Ingredients :

- Instead of fresh fruit/ fruit puree, you can also use other flavourings like chocolate syrup, vanilla escence, strawberry syrup or any other fruit syrup.
- The milk has to be cold. Otherwise if you use citrus fruits like strawberries, it might curdle the milk.

Dry Ginger Tea (Chukku Coffee)


Ingredients :



Dry ginger (Chukku) - 1/2" piece (ground or crushed)
jaggery (Palm Sugar) - as needed for sweetness
Whole Peppercorns - 1 tsp
Coffee powder/Tea leaves -  1 tsp (optional)
Cumin seeds - 3/4 tsp
Basil leaves(Tulsi) - 4-5
Water - 1.5 cup




Preparation Method :




1. Boil the water in a saucepan with Jaggery (palm sugar), dry ginger, crushed
peppercorns and cumin seeds. 




2. Add the coffee powder/ tea powder to this if needed.




3. Let this boil for 4-5 minutes.




4. Finally add the basil leaves(tulsi) and switch off.




5. Serve it piping hot as a remedy for cold and throat infection.
Tips :




   - If Jaggery (palm sugar) does not give enough sweetness add little sugar.
   

Mango Lassi

Ingredients :
 
Mango (ripe) - 1 (sliced)
Yogurt - 4 tblsp
Whipping Cream - 2 tsp
Sugar - 4 tblsp
Saffron - few strands (boiled in 2 tsp milk)
Ice crushed - optional

 
Method :

1. Mix all the ingredients in a blender and blend it. Serve chilled.  

2. If you are using crushed ice, serve immediately.
