Simple Prawns Fry / प्रॉन मसाला /రొయ్యల వేపుడు


Ingredients :

Prawns/Shrimp(cleaned) - 1/4 kg
Onions (chopped) - 3
Green chily(sliced) - 4nos.
Salt - To Taste
Turmeric Powder - 1/6 Tsp
Chily Powder - 2 Tsp
Coriander powder - 1/2 Tsp
Cumin Powder - 1/4 Tsp
Garam Masala Powder - 1/4 Tsp
Coriander Leaves(chopped) - handful
Oil - 4-5 Tsp

Preparation Method :

1. Take a Pan add Oil, after Oil heat add 5 tsp of Oil, then add Prawns then add salt and keep a lid for 5 minutes.

2. After 5 min. add chopped onions and chilies and keep a lid for another 5 minutes.

3. After add ginger garlic paste fry for 1 minute until raw smell gone, add Turmeric,chily,cumin and coriander powders. Mix well.

4. Then add garam masala and sprinkle coriander leaves and then switch off the stove.

* Easy and Tasty Prawns / Shrimp Fry Ready. It is a side dish for Sambar.


How to Make KFC Style Fried Chicken


Ingredients :

Chicken drumsticks - 3

Ginger garlic paste - 1tbsp

All purpose flour / Maida - 1/2 cup

Red chilli powder - 2tbsp

Salt - To Taste

Bread crumbs - as much as you want

Coriander powder - 1tbsp

Tomato ketchup - 2tbsp

Freshly grounded pepper - 1 tbsp

Eggs - 2

Cornflakes Powder or Corn Powder - 2 Tsp

Oil- for deep frying

Preparation method :

1. Make thin slits to the chicken with a sharp knife.

2. Marinate the chicken in ginger garlic paste,chilli powder,salt,coriander powder,tomato ketchup,pepper for at least 5 hours.

3. Take a plate and mix all purpose flour,salt,chilli powder and bread crumbs.Bash the corn Powder into tiny pieces and mix them to the flour mixture.

4. Crack the Eggs in a plate and beat it well with milk.

5. Dip each drumstick into egg mixture and dip in the flour mixture.

6. Repeat the above step until the chicken is coated well.Egg makes to bind the flour mixture with chicken well and keep the juices inside tact.

7. Now heat oil for deep Fry and fry the chicken drumsticks until golden crisp.

8. The chicken pieces are cooked well inside. Remove From Oil and Keep in Paper Towel.

9. Serve with some onion Rings and lemon.

* KFC Style Chicen Drumsticks are Ready.








Masala Fish Fry


Ingredients :
 fish Pieces - 5 Clean& rinse it well and set aside

To grind :

Onion - 1
Coriander Seeds - 1/2 Tsp
Poppy Seeds - 1/4 Tsp
Cinnamon Stick - 1 Inch
Cloves - 4
Garlic Pods - 6
Star Anise - 1/2
Fennel Seeds - 1/4 Tsp

For the marinade :

Curd - 2 Tsp
Coriander Powder - 1 Tsp
Red Chily Powder - 1 Tsp
Turmeric Powder - 1/4 Tsp
Salt - To Taste

Preparation Method :

1. Take a Jar add all Ingredients and Make a Paste. Mix all Ingredients

2. Apply the Masala Paste to The Fish Pieces, Marinate the Fish for 30mins and Set aside.

3. Take a Kadai or Dosa Pan add Oil  Heat Oil and add the fish pieces toast it till golden brown. You can deep fry the fish pieces.

4. Fry the fish pieces on low-medium flame on Both Sides. Then Fish Pieces changes Color into Light Brown. Remove From Pan.

* Serve with onion rings.

Small Fish Fry (chinna chepalu vepudu)


Ingredients :

Kozhuva  - 200 gms
Ginger/garlic paste - 2 tsp
Lime juice - 1 nos
Salt to taste
Chilly powder - 1 tsp
Whole black pepper - 10 nos
Turmeric powder - 1 tsp
Rice flour - 1/2 tsp
Curry leaves few
Oil to fry the fish
Salad to serve with the fish

 preparation Method :

1) Clean and wash the fish. Squeeze out all the water.

2) Grind chilly powder, whole back pepper, turmeric powder and rice flour to a fine paste.

3) Add ginger garlic paste and salt to taste.

4) Marinate the fish with the paste. Add lime juice.

5) Keep it for 15 minutes.

6) Heat the oil in a kadai and fry the fish on slow flame, till crisp.

7) When the fish is almost done, add curry leaves into the oil.

8) Fry it for a minute. Remove the fish and curry leaves from the oil.

9) Serve hot with salads.


Chicken leg pieces fry

Chicken leg pieces fry :

Ingredients:

Chicken leg pieces-5
Garammasala powder-2 spoons,
Ginger garlic paste-2 spoons,
Red chilly powder-1 spoon,
Salt tasty
Orange red colour
oil-1 cup,
Coriander and curry leaves.

Preparation Method:

1.Cut the chicken leg pieces in cross.
2.Make a paste with redchilly powder,salt ,Gingergarlic paste,garam masala.
3.Dressed the Leg pieces completely with Masala.
4.Spray little lemon juice on Leg pieces.
5.Marinate for 30 minutes.
6.Take a Kadai and add 1 cup of Oil and allow to heat.
7.Add marinated Leg pieces and cook on low Flame.
8.Cook 20 mints and add red color and allow to cook till golden brown color appears.
9.When they turn in to brown color switch off the stove and take them in to plate.
10.Garnish with curry and coriander leaves.
11.Chicken leg pieces are ready.


Prawns Masala


Ingredients :

Fresh prawns – ½ kg
Onions – 1, big size, finely chopped
Ginger – 1” piece, finely chopped
Garlic – 10, crushed
Coconut – ½ cup, freshly scrapped
Turmeric powder – ½ tsp
Red chili powder – 2 tsps
Tamarind paste – 1 tbsps
Mustard Seeds – ½ tsp
Small onions/ Chinna Ulli – 10, sliced
Curry leaves – 2 sprigs
Salt to taste
Oil – 2 tbsp

Preparation method :

1. Take a thick-bottomed vessel, mix tamarind paste, red chilli powder, turmeric powder, chopped onions, ginger- garlic and salt, along with required amount of water.

2. Mix everything together well.

3. Bring to boil and cook in reduced heat for 8-10 minutes.

4. Once the prawns are half cooked, add the coconut scrapings.

5. Cook till the prawns are cooked and allow all the water to evaporate and the prawns become dry.

6. Heat the oil in a pan.

7. Add the mustard seeds, wait until the mustard starts crackling & add the sliced small onions and curry leaves.

8. Fry till the onions turn golden brown.

9. Add this seasoning to the prawns and sauté for 6-8 minutes.

* Switch off the stove and Serve hot.

Crabs Coconut Fry


Ingredients :

Clean Crabs well.
Finely sliced Onions
slit Green Chillies, 
Chopped Tomatoes, 
Curry Leaves few,
Turmeric Powder, 
Salt to Taste,
Oil for frying.

Grind :

Ginger, Garlic & Coriander leaves.
Grind Coconut separately & keep. 
For Garnishing: 2-3 Tablespoons of Chopped Corriander Leaves. 


Preparation Method :

1. Pour oil in a vessel fry the sliced onions, curry leaves & green chillies .

2. when the onions are getting brown add the ground masala, salt, turmeric powder & fry nicely till the oil comes to the surface.

3. now add the chopped tomatoes & continue to fry the masala till the tomatoes are soft.
add the ground coconut paste.

4. mix well, add the crabs,required.

* Serve Hot With Rice.

Lemon Pepper Chicken


Ingredients :

Chicken breast - 1 (slice it horizontally)
Crushed pepper - As per taste 
Lime juice - 2 tsp
Salt- as per taste
Oil -To fry

Preparation Method :

1. Cut the breast horizontally. Now put it in a ziplock bag and tap well with a hammer.
2. Now add pepper salt and lemon juice.Keep it for 1/2 hr in the refrigerator.
3. Now pan fry it.(better to use non stick dosa or chappatti pan). 
4. You can use this to make sandwiches, pasta, wraps, pizzas, noodles, fried rice or roll it inside chappati and have it.

Variations :

- Add 1 tblsp of soy sauce for a chinese flavour.
- You can add 1/2 tsp of italian seasoning for another dimension of flavour.

Fried Chicken like KFC


Ingredients :

Coating-1
All purpose Flour-1/2 Cup

Coating-2 :

Eggs (beaten) - 2
Milk - 1 1/2 cups
Soy sauce - 1/2 tsp. 
Knorr chicken bouillon - 1 tsp. 
Freshly chopped parsley - 1 tbsp. 
Garlic (minced) - 2 large cloves 

Coating-3 :

All purpose flour - 1 cup
Fine bread crumbs - 3/4 cup 
Salt - 1/2 tsp. 
Garlic powder - 1/2 tsp. (not salt)
Onion powder - 1/4 tsp. (not salt)
Paprika - 1/2 tsp. 
Black pepper - 2 tsp. 

Frying :

Cooking oil - 5-6 cups 
Chicken - 2 lb (cut in pieces)




Preparation Method :

1.Mix each coating ingredients in seperate bowls.

2.Heat oil in a kadai put in medium heat(to cook the chicken).

3.Coat the chicken pieces in first flour coating and dip in milk egg coating and in final coating of bread crumbs. 

4.Deep fry the chicken in oil. The oil should not be too hot otherwise the outside gets browned before the inside gets cooked. 

5.Check if its cooked properly and its light brown in color.

6.Put in paper towel.

* Serve with fries or onion rings with tomato sauce.

Baked Fish


Ingredients :

Whole Fish - 1
Turmeric Powder - 1/4 tsp
Chilly Powder - 2 tsp
Corriander Powder - 2 tsp
Ginger garlic Paste - 2 tsp
Pepper Powder - 1 tsp
Salt - to taste
Oil - 1 tblsp
Onion - 1/2
Garlic - 3 cloves
Cilantro - 1/2 bunch
Lemon - 1/2

Preparation Method :

1. Wash the fish nicely and make small slits on both sides.

2. Marinate the fish with salt, chilly powder, turmeric powder, corriander powder, pepper powder and ginger garlic paste.

3. After marinating for half an hour, stuff the onions, garlic, lemon slices and cilantro into the body of the fish.

4. Sprinkle few drops of oil over the body of the fish.

5. Bake the fish in an oven preheated to 350 degrees for 20 minutes.

6. Set the oven to broil mode and broil it for 5 minutes.

7. Flip the fish and broil the other side for another 5-10 minutes until the skin of the fish is nicely browned.

 * Garnish with cilantro and lemon rings and serve.

Lemon Pepper Shrimp (Prawns)


Ingredients :

Shrimp - 1 lb (cleaned and deveined)
Freshly ground pepper - 1 tsp (or as per taste)
Lemon - 1
Salt - as needed
Oil - 1 tsp
Turmeric Powder - 1/4 tsp
Ginger garlic paste - 1 tsp

Preparation Method :

1. Gently scrap the zest of the lemon and put it in a bowl along with the ginger garlic paste, salt, turmeric powder, freshly ground and juice of half the lemon.

2. Add the shrimp to this and toss everything together till the shrimp is coated with the .spices.

3. Heat oil in a pan and when it is hot enough, add the shrimp.

4. Stir fry the shrimp for 2-3 minutes until the shrimp is cooked. The shrimp curls up and becomes opaque, an indication that it is cooked.

5. Transfer it to a serving bowl. Over cooking of the shrimp will make it rubbery.

 * Serve as a side, as appetizer or toss with some veggies to make a simple shrimp salad.

Chilli Prawns


Ingredients :


Marination :

Shrimp - 500 gms
Ginger Garlic Paste -2 tsp
Chilli Power -1 spoon
Garam Masala Powder -1/2 tsp
Corn flour -1 tblsp
Red food color - couple pinches/drops
Lemon juice -1 tblsp 



For tossing :

Bell pepper (colored ) -1 cup (sliced lengthwise)
Curry Leaves - 1 string
Onion - 1/2 cup(Sliced lengthwise)
Chilli sauce - 1 tblsp or to taste
Soya sauce - 1 tblsp or to taste


Preparation Method :


1. Clean and devein the Shrimp.

2. Mix the Shrimp with all the marination ingredients and let it sit for an hour.

3. Heat oil in a wok, fry the curry leaves and scoop it out and keep separately.

4. In the same pan saute the onions and the bell peppers. Let the veggies stay crunchy.

5. Add the chili sauce and little Soya sauce.

6. Add the marinated shrimp on the sautéed veggie bed and close it with a lid and let it cook on a low flame.

7. After couple minutes mix it together and let it cook for another minute

8. Add the curry leaves to it.

9. Yummy spicy Chilli Shrimp ready.

* Serve it with any kind of pulav or serve as a starter. 



Tips :

Do not overcook the shrimp, it will become rubbery.
