Brinjal Fry / Vankaya Vepudu


Ingredients :

Brinjal - 1/4 Kg
Cut into Slices in Water
Onions - 2
Green Chily - 4
Peanuts - 1 Tsp
Chana Dal - 1/4 Tsp
Urad Dal - 1/6 Tsp
Mustard Seeds - 1/4 Tsp
Cumin Seeds - 1/6 Tsp
Red Chily - 3
Garlic Pods - 8
Curry Leaves - 2 String
Ginger Garlic Paste - 1 Tsp
Coriander Powder - 1/4 Tsp
Turmeric - 1/4 Tsp
Red Chily Powder - 1/2 Tsp
(Optional)
Oil - 3 Tsp
Coriande - 1 Bunch

Preparation Process :

1. Take a Pan add Oil, after Heat Oil add Sliced Onions and all Dals. Fry for 2 Min.

2. Add Garlic Pods fried Well after Add Green Chily, Curry Leaves , Mustard, Cumin & Red Chily. Fried Well.

3. Add Brinjal Pieces & Add Salt  Keep a Lid for 5-10 Min.

4. Add Ginger Garlic Paste and Fried Well. After 2 Min. Add Turmeric, after Mix Well  & Keep a Lid
Add Coriander Powder & Red Chily Powder.

5. After 2 Min. add Sliced Coriander Leaves & Switch Off the Stove.

* Easy & Tasty Brinjal Fry Ready.
