Gherkins Fry / Kovakka Stir Fry

Ingredients :

Gherkins - 1/4 Kg
Onion - 1
Green Chily - 4
Garlic Pods - 6
Chana Dal - 1/4 Tsp
Urad Dal - 1/6 Tsp
Red Chily - 2
Salt - To Taste
Cumin Seeds - 1/4 Tsp
Mustard Seeds - 1/4Tp
Coriander Powder - 1/4 Tsp
Turmeric Powder - 1/4 Tsp
Red Chily Powder - 1/2 Tsp
Oil - 3 Tsp
Curry Leaves - 2 Strings
Coriander Leaves - 1 Bunch

Preparation Method :

1. Clean the Gherkins and then cut Gherkins into thin round shapes. Cut the Onions and Green Chilies and Keep aside.

2. Heat oil in a Pan add Chana Dal, Urad Dal, Cumin,Garlic Pods, Mustard Seeds, after add Sliced Onion and Green Chily. Then add Curry Leaves and Red Chily. Fry for 2 Minutes.

3. Then add Gherkins into popu / Tadka. Fry on Low Flame. and Keep a Lid for % Min.

4. Remove Lid then add Turmeric, Red Chily, Coriander Powder and Required Salt.Fry for 2-3 Min.

5. Lastly add Sprinkle Coriander Leaves and Turn Off the Flame.

* Tasty Gherkins Fry Is Ready Combined with Sambar.

Minapa Sunnundalu / Urad Dal Laddu/उरद दाल लड्डू /మినప సున్నుండలు

Ingredients :

Urad Dal - 1 Cup
Sugar - 1/2 Cup or 3/4 Cup
Ghee - 1/2 Cup

 Preparation Method :

1. Take a Pan or Kadai after Dry Roast Urad Dal Until It Turns to Golden Brown. Grind it to Make a Fine Powder ( If you Want more Smooth Sieve that Powder).

2. Grind the Sugar like Fine Powder after Mix into Urad Dal Powder.and after Melted the Ghee.

3. Now Mix the Urad Dal Powder, Sugar Powder and also Ghee (Do Not Add all Ghee at a Time, First Add Half a Cup and Mix Well.

4. Try to make a laddu shape by taking hand full of batter in your hand and pressing it hard to make it into a round shape. (that is it should not break if you pinch it slowly).

* Tasty Sunnundalu Ready. It is Very Strengthy to all.

Spicy Potato Masala Recipe / Bangaladumpa Masala Koora


Ingredients :

Potato / Aloo - 1/4 Kg
( Boiled & Peeled )
Onions - 2
Tomato - 2
Green Chily - 6
Chana Dal - 1/4 Tsp
Urad Dal - 1/6 Tsp
Mustard Seeds - 1/4 Tsp
Cumin Seeds - 1/6 Tsp
Ginger Garlic Paste - 1 Tsp
Turmeric - 1/4 Tsp
Red Chily Powder - 1 Tsp
Pepper Powder - 1/4 Tsp
Cumin Powder - 1/4 Tsp
Coriander Powder - 1/4Tsp
Salt - To Taste
Oil - 3 Tsp
Curry Leaves - 3 Strings
Coriander - 1 Bunch

Preparation Process :

1. Take Potatoes Washed, Boiled & Peeled. Cut the Onions, Green Chilies & Tomatoes.

2. Take A Pan add Oil, After Heat Oil add Chana Dal, Urad Dal. After add Garlic Pods Fry for 2 Minutes.

3. Add Sliced Onions & Green Chilies. Add Cumin, Mustard seeds, after Splutter add Sliced Tomatoes.

3. Add Curry Leaves & Required Salt. then keep a Lid Until Tomatoes Mashy.

4. Add Turmeris, Red Chily, Cumin, Pepper, Coriander Powders Mix Well.

5. Lastly add Boiled Potatoes Stir Well for 5 Min. Sprinkle with Chopped Coriander Leaves & then Turn Off the Stove.

Tomato Dal / Pappu Tamata Recipe


Ingredients :

Toor Dal / Red Gram Dal - 1 Cup
Green Chily - 10
Tomatos - 6
Cut into Pieces
Turmeric - 1/4 Tsp
Salt - To Taste

Popu Ingredients :

Mustard Seeds
Cumin Seeds
Curry Leaves
Garlic Pods
Red Chily
Hing - 1 Pinch (optional)
Oil - 2 Tsp

Preparation Process :

1. Take dal into a Pan fry for 3-4 Min. Until Light Brown. Now Take a Cooker add Dal and required Water Soak for 30 Minutes.

2. Now add Sliced Green Chilies, Tomatos, and Turmeric. Mix Well with Spatula.

3. Keep  Cooker into a Flame Upto 3 - 4 Whistles. Remove From Flame. After Add Required Salt and Mash the Dal. Keep aside.

4. Take a Pan add Oil after add Garlic Pods,  Cumin, Mustard Seeds (after Splutter) add Curry Leaves and Red Chilies. Then add Hing if You Want.

5. Add Mashed Dal into Popu Then Turn Off the Stove. Remove From Flame.

* Tasty Tomato Dal is ready. Combined with Chapathi, Roti or Hot Rice.


Brinjal Fry / Vankaya Vepudu


Ingredients :

Brinjal - 1/4 Kg
Cut into Slices in Water
Onions - 2
Green Chily - 4
Peanuts - 1 Tsp
Chana Dal - 1/4 Tsp
Urad Dal - 1/6 Tsp
Mustard Seeds - 1/4 Tsp
Cumin Seeds - 1/6 Tsp
Red Chily - 3
Garlic Pods - 8
Curry Leaves - 2 String
Ginger Garlic Paste - 1 Tsp
Coriander Powder - 1/4 Tsp
Turmeric - 1/4 Tsp
Red Chily Powder - 1/2 Tsp
(Optional)
Oil - 3 Tsp
Coriande - 1 Bunch

Preparation Process :

1. Take a Pan add Oil, after Heat Oil add Sliced Onions and all Dals. Fry for 2 Min.

2. Add Garlic Pods fried Well after Add Green Chily, Curry Leaves , Mustard, Cumin & Red Chily. Fried Well.

3. Add Brinjal Pieces & Add Salt  Keep a Lid for 5-10 Min.

4. Add Ginger Garlic Paste and Fried Well. After 2 Min. Add Turmeric, after Mix Well  & Keep a Lid
Add Coriander Powder & Red Chily Powder.

5. After 2 Min. add Sliced Coriander Leaves & Switch Off the Stove.

* Easy & Tasty Brinjal Fry Ready.

Curd Vada / Perugu Garelu / perugu


Ingredients :

Black Gram Dal/Urad Dal - 1 Cup
Salt -To Taste
Oil - To Deep Fry

For Making of Curd Vada :

Chana Dal - 1/4 Tsp
Urad Dal - 1/6 Tsp
Ginger - 1 Inch
Green Chily - 3
Curry Leaves - 2 Strings
Mustard Seeds - 1/4 Tsp
Cumin Seeds - 1/6 Tsp
red Chily - 2
Turmeric Powder - 1/4 Tsp
Coriander Leaves - 1 Bunch
Oil - 1 or 2 Tsp

Preparation Method :

1. Soak the Urad Dal (3 Hours ) or Black Gram Dal ( 8 Hours) in Water.After Strain the Water. And then Grind a Smooth PasteSprinkling Very Little Water.Add Salt to Taste.Keep aside.

2. Take a Kadai add Oil to Deep Fry after Wet your hands with water take Lemon Size of Batter and flatten it into a vada on a greased sheet or banana leaf. Make a hole in the center of the vada so that it cooks evenly all over.

3. Slowly drop the vada into the hot oil and fry it on both sides on medium flame to a golden brown color.

4. Remove the Vadas from Oil in a Paper Towel Plate.Keep aside.

5. Take Another Pan add Oil then add Chana Dal and Urad Dal, after Ginger, Green Chilies,Mustard Seeds, Cumin Seeds, Curry Leaves,  Red Chily and Turmeric.

6. Fry Until all Spices are Fried Well then Pour the tempering yogurt sauce over the vadas. Garnish with coriander leaves.

* Serve Cool this Yummy Recipe. Now Tasty Curd Vada is Ready to Eat.


Minapa Garelu / Vada


Ingredients :

Black Gram Dal/Urad Dal - 1 Cup
Salt -To Taste
Oil - To Deep Fry

Preparation Method :

1. Soak the Urad Dal (3 Hours ) or Black Gram Dal ( 8 Hours) in Water.After Strain the Water. And then Grind a Smooth PasteSprinkling Very Little Water.Add Salt to Taste.Keep aside.

Chicken Raw Cashew Nuts Curry/काजू मुर्ग सब्जी /చికెన్ జీడిపప్పు కూర

Igredients :

Chicken - 1/4 Kg
Raw Cashew  Nuts - 100g
Onions - 3 (sliced)
Green Chily - 4(sliced)
Ginger Garlic Paste - 1 Tsp
Turmeric Powder - 1/4 Tsp
Red Chily Powder - 2 Tsp
Coriander Powder - 1/2 Tsp
Garam Masala Powder - 1/2 Tsp
Salt - To Taste
Curry Leaves - 2 String
Coiander Leaves - 1 Bunch

Preparation Method :

1.Take Kadai add Oil, after Heat Oil add Sliced Onions after add Green Chily and Curry Leaves fry Onions turns into Brown.

2. After add Chicken and Keep a Lid For 5 Min. Then Remove the Lid and Add Ginger Garlic Paste, Fry for 2 Min. and then add turmeric and Red Chily Powder then keep a lid.

3. After add required Water and Keep a Lid for 5min. After 5 min. add raw cashew nuts, Coriander Powder and Garam Masala Powder.

4. After 2 or 3 Min. add Coriander Leaves then Switch Off the Stove.

* Tasty Chicken Curry with Raw Cashew Nuts Curry is Ready.

Red Onion chutney (Vengaya chutney) recipe


Ingredients :

Onions (Sliced) - 6

Red chillies  - 5

Tamarind  - 2 pinches

Salt  - 3/4 tsp


To Temper :

Oil 2 tsp

Mustard 3/4 tsp

Cumin seeds - 1/4 Tsp

Curry leaves  - 2 Strings

Preparation Method :

1. In a kadai add a tsp of oil fry red chillies and add peeled chopped small onion and Salt fry until golden Brown. Then add Soaked Tamarind and Off the Flame.

2. Heat oil in kadai and temper with the items given under ‘To temper’ table and pour the ground mix with little more water. (1/8 cup) Immediately switch off the stove and give a stir.

* Tasty Onion Chutney is Ready.

Punjabi Lassi / Sweet Lassi Recipe



Ingredients :
 fresh thick creamy Curd / Yogurt,chilled - 1 1/2 cups
 Milk,chilled - 1/2 cup
 chilled Water - 1/4 cup
Cardomom - 2 (Optional)
 Sugar - 4 - 6 tbsp
Lemon Juice -1/4 Tsp (Optional)
 Ice cubes (optional) - 4-5

Preparation Method :

1. In a juicer / mixer blend curd with milk, water, sugar until it becomes frothy. Do not blend for long otherwise it will form butter on top. You can do this process in a traditional way of whisking it with the wooden whisk.

2. Check the sweetness and add more sugar if needed. Also adjust the consistency by adding more curd / milk to suit your taste buds.

* Serve it in a glass topped with cream and ice cubes.

Mango Juice Recipe




Ingredients :

Mangoes (Peeled the Skin & Cut the Pieces) - 2
(I Used Bangina Pally Mangoes)
Sugar - 6 Tsp
Water - 2 Glasses (1/2 Litres)
Ice Cubes - 10 (Optional)

Preparation Method :

1. Take Mangoes and Peeled The Skin after Cut Them into Small Pieces.

2. Take a Mixi Jar or Juicer add Mango Pieces and Sugar Grind Them.After add Required Water and Ice Cubes after Grind Once.

3. Then Tasty Mango Juice is Ready.

* Serve Cool.

Bottle Gourd Dal / तूरदाल लौकी / ఆనపకాయ సొరకాయ పప్పు


 Ingredients :

Bottle Gourd -1
Peeled & Cut the Cubes
Toor Dal / Kandi Pappu  / Split yellow moong dal- 1 Cup
Tomato - 2
Green Chily - 10
Turmeric Powder - 1/4 Tsp
Salt - To Taste
Hing - 2 Pinch
Garlic Pods - 8
Red Chily - 3
Cumin Seeds - 1/4 Tsp
Mustard Seeds - 1/4 sp
Curry Leaves - 3 Strings
Oil - 2 Tsp

Preparation Method :

1. Clean the Toor Dal With Water after Add Water & Soak for 30 Minutes.

2. After Keep it in a Flame then add Green Chily, Tomato, Sliced Bottlegourd and Turmeric. tthen Add Required Water & Keep a Lid Upto 3-4 Whistles.

3. After Remove the Pressure Open the Lid then Mash The Dal With Spatula. Add Required Salt and Keep it Aside.

Popu / Tadka :

1. Take Tadka Add Oil, After Add Garlic Pods, Mustard Seeds, Cumin Seeds, Curry Leaves, Red Chilies and Hing.

2. Add this Popu into Dal.

* Tasty Bottle Gourd Dal is Ready Now. Taste With Hot Rice or Rotis.


Masala Fish Fry


Ingredients :
 fish Pieces - 5 Clean& rinse it well and set aside

To grind :

Onion - 1
Coriander Seeds - 1/2 Tsp
Poppy Seeds - 1/4 Tsp
Cinnamon Stick - 1 Inch
Cloves - 4
Garlic Pods - 6
Star Anise - 1/2
Fennel Seeds - 1/4 Tsp

For the marinade :

Curd - 2 Tsp
Coriander Powder - 1 Tsp
Red Chily Powder - 1 Tsp
Turmeric Powder - 1/4 Tsp
Salt - To Taste

Preparation Method :

1. Take a Jar add all Ingredients and Make a Paste. Mix all Ingredients

2. Apply the Masala Paste to The Fish Pieces, Marinate the Fish for 30mins and Set aside.

3. Take a Kadai or Dosa Pan add Oil  Heat Oil and add the fish pieces toast it till golden brown. You can deep fry the fish pieces.

4. Fry the fish pieces on low-medium flame on Both Sides. Then Fish Pieces changes Color into Light Brown. Remove From Pan.

* Serve with onion rings.

Grated Mango Pickle / Mamidi Thurumu Pachadi


Ingredients :-

Mango Pieces : 2 Cups
Red Chilli Powder : 20 Grams / 3 TSp
Mustured Seeds Powder : 2 TSp
Fenugreek Powder : 1 TSp
Salt : 20 Grms or To Taste

Popu / Tadka :-

Garlic Pods : 10
Red Chilies : 3
Curry Leaves : 1 Bunch
Seasame Oil or Ground-Nut Oil : 100 Grams
Chana Dal : 1/2 TSp
Urad Dal : 1/4 TSp
Mustured Seeds : 1/4 TSp
Hing : 1 Pinch

Preparation Method :-

1) Take Kadai and add fenugreek seeds upto brown in low flame. Switch of the flame and keep aside. After Cool, make fine powder of this.

2) Take Mangoes and peel the skin and cut into small pieces.

3) Take a bowl and keep in dry, add mango pieces, mustured powder, fenugreek powder, red chili powder, salt and 3 TSp of Oil and mixed well, keep it aside.

4) Take Kadai add chana, urad dal, garlic pods then fry untill brown then add fenugreek seeds, mustured seeds, red chilies, curry leaves and hing. Switch off the flame.

5) When the thadka is completely cooled add it to the pickle and mix well.

* Tasty Grated Mango Pickle is Ready.

Gherkins Tomato Curry

Ingredients :

Gherkins Washed & Sliced - 1/4 Kg
Onions Big sliced - 2
Tomato Sliced - 3
Green Chily - 4
Curry Leaves - 2 Strings
Turmeric Powder - 1/4 Tsp
Red Chily Powder - 2 Tsp
Coriander Powder - 1/2 Tsp
Salt - To Taste
Ginger Garlic Paste (Optional) - 1/4 Tsp
Oil - 2 Tsp

Preparation Method :

1.Take A Kadai add Oil after Heat Oil add Sliced Onions and Green Chilies. Fry Until Light Brown, after Add Gherkins And Stove On Medium Keep a Lid for 5 Min.

2. After add Sliced Tomatos then add Ginger Garlic Paste fry For 2 Min. then after Turmeric, Red Chily Powder & Saute Well, add Some Water.

3. Cook for Water absorbed and Curry Like a Gravy. Switch Off the Stove.

* Gherkins Tomato Curry Is ready.


Kerala Fish Cury Recipe


Ingredients :

Fish Pieces (Cleaned with Crystal Salt ) - 1/2 Kg
Big Onions Sliced - 4
Green Chily Sliced - 6
Mustard seeds - 1/2 Tsp
Fenugreek Seeds - 1/2 Tsp
Ginger Garlic Paste - 1 Tsp
Turmeric Powder - 1/4 Tsp
Red Chily powder - 2-3 Tsp
Coriander Powder - 1/2 Tsp
Salt - To Taste
Tamarind - Big Lemo Size
Oil - 3-4 Tsp
Curry Leaves - 2 Strings
Coriander Leaves - 1 Bunch
Water - 1 Glass

Preparation Method :

1. Take Hot water and Soak Tamarind.

2. Take A Kadai add Oil, After Heat Oil,Add Mustard Seeds and Fenugreek Seeds after Splutter add Ginger Garlic Paste, Fry for 2 Min. add Curry Leaves and Green Chilies.

3. After add Sliced Onions Saute Well and Keep a Lid for 5 Min.Then Onions turn into Brown remove Lid  then add Turmeric, Red Chily, Coriander Powder and Salt. Mix Well then add Tamarind Juice with Required Water.Keep a Lid for 5 Min.

4. Remove Lid Drop Fish Pieces into Kadai.

5. Keep the Pan Covered and Cook in Low Flame till Oil Starts Appearing on the Top.It Will take Approx 20 Min.for This. By Time Fish Will Be Cooked and Gravy is Ready.

6. switch off the Stove.

* Tasty Kerala Fish Curry is Ready Combined with Hot Hot Rice or kappa (tapioca) vevichathu.

Mysore Bonda / Mysore Bajji


Ingredients :

Urad Dal - 1 Cup or 100g
Rice Flour - 2 Tsp (Optional)
Maida/Alpurpose Flour - 21/2 Cup or 250g
Sour Curd - 50g
Kitchen Soda - 1/4 Tsp
Salt - To Taste
Oil - To Fry

Preparation Method :

1. Soak the Urad Dal or Black Gram Dal for 4 Hours.Make a Fine Paste with Less Water.

2. Take A Bowl add Urad Dal Batter, Maida and Curd. Mixit Well With Less Water.Ferment for 3-4 Hours or Over Night.

3. Next Day Morning Take Batter add Kitchen Soda and Required Salt.Now The Dough is Ready to Make Bondas.

4. Take Kadai add Oil to Fry after Heat Oil, Take Batter into Small Size Balls Put into the Oil.When Stove is in Medium Plame.

5. Then Bonda Flout in the Oil, Fry the bondas till it becomes crisp in medium flame on both the sides.

6. Remove the fried bondas and place it in a plate.Remaining Dough is the Same Process.
